My name is Maria Kathleen Janco-Houmard. I was born in San Pedro Sula, Honduras. At age one, I was adopted and raised in Yulee, Florida. I received my B.S. degree from UNF where I majored in Mathematics and minored in Computer Science. I currently work at Sungard Relius. I married my wonderful Husband, Terry (aka Ty) Houmard Jr, on May 14th 2011. We live in Fernandina Beach, Florida and hope one day to start a family together. The reason why I decided to be a "blogger", is because I want to share my experience of being a Houmard. I know it is going to be a joyous adventure with Ty especially when we start to have a family, buy a house, etc....

Spinach Chicken Rotini

Serves 8

Ingrediants:

16oz box of Rotini
2 tbsp butter
3 boneless chicken breast (cut into strips)
Lemon juice
Pepper
1 medium onion (diced)
1 green pepper (diced)
1 yellow pepper (diced)
2 frozen boxes of cream of spinach (thawed)
2 tbsp of cooking white wine
1 tsp minced garlic
2 tsp salt
2 tsp pepper
1 tbsp Parmesan cheese

Instructions:

  1. Cook rotini as instructed on box.  Drain and put to the side
  2. Melt butter in large skillet, then put chicken strips in skillet and cook until chicken is cooked (add lemon and pepper for flavor)
  3. Add diced onions and peppers
  4. Saute onions and peppers with chicken then add cream of spinach
  5. Add cooking white wine, garlic, salt and pepper
  6. Add rotini and stir
  7. Add Parmesan cheese on top
  8. Reduce heat, cover and simmer for 5 mins.
