Serves 8
Ingrediants:
16oz box of Rotini
2 tbsp butter
3 boneless chicken breast (cut into strips)
Lemon juice
Pepper
1 medium onion (diced)
1 green pepper (diced)
1 yellow pepper (diced)
2 frozen boxes of cream of spinach (thawed)
2 tbsp of cooking white wine
1 tsp minced garlic
2 tsp salt
2 tsp pepper
1 tbsp Parmesan cheese
Instructions:
- Cook rotini as instructed on box. Drain and put to the side
- Melt butter in large skillet, then put chicken strips in skillet and cook until chicken is cooked (add lemon and pepper for flavor)
- Add diced onions and peppers
- Saute onions and peppers with chicken then add cream of spinach
- Add cooking white wine, garlic, salt and pepper
- Add rotini and stir
- Add Parmesan cheese on top
- Reduce heat, cover and simmer for 5 mins.
