My name is Maria Kathleen Janco-Houmard. I was born in San Pedro Sula, Honduras. At age one, I was adopted and raised in Yulee, Florida. I received my B.S. degree from UNF where I majored in Mathematics and minored in Computer Science. I currently work at Sungard Relius. I married my wonderful Husband, Terry (aka Ty) Houmard Jr, on May 14th 2011. We live in Fernandina Beach, Florida and hope one day to start a family together. The reason why I decided to be a "blogger", is because I want to share my experience of being a Houmard. I know it is going to be a joyous adventure with Ty especially when we start to have a family, buy a house, etc....

Maria's Pot Roast Stew

Serves 12


Ingredients:


  • 2 tbsp butter
  • 2 lbs Pot Roast cubed
  • Red Win Vinegar
  • Olive Oil
  • Steak Seasoning
  • Pepper
  • Salt
  • 3 carrots (diced)
  • 3 tomatoes (diced)
  • 1 green pepper (diced)
  • 1 sweet pepper (diced) (or 2 chili peppers)
  • 1 radish (diced)
  • 1/2 large onion (diced)
  • 3 lg potatoes (cubed)
  • 2 cups vegetable broth
  • 2 cups tomato juice
  • 1 cup water
  • 1 tbsp Italian Seasoning
  • 1 tbsp Oregano
  • 1 tbsp Onion powder
  • 1 tbsp Cajun Seasoning

Instructions:

  1. Melt butter in large skillet, then add in pot roast.  Add red wine vinegar, olive oil, steak seasoning, pepper and salt.  Once post roast is done cooking, add to the slow cooker (do not drain).
  2. Add the rest of ingredients to slow cooker
  3. Cook for 3 - 5 hrs.
