Maria's Pot Roast Stew
Serves 12
Ingredients:
- 2 tbsp butter
- 2 lbs Pot Roast cubed
- Red Win Vinegar
- Olive Oil
- Steak Seasoning
- Pepper
- Salt
- 3 carrots (diced)
- 3 tomatoes (diced)
- 1 green pepper (diced)
- 1 sweet pepper (diced) (or 2 chili peppers)
- 1 radish (diced)
- 1/2 large onion (diced)
- 3 lg potatoes (cubed)
- 2 cups vegetable broth
- 2 cups tomato juice
- 1 cup water
- 1 tbsp Italian Seasoning
- 1 tbsp Oregano
- 1 tbsp Onion powder
- 1 tbsp Cajun Seasoning
Instructions:
- Melt butter in large skillet, then add in pot roast. Add red wine vinegar, olive oil, steak seasoning, pepper and salt. Once post roast is done cooking, add to the slow cooker (do not drain).
- Add the rest of ingredients to slow cooker
- Cook for 3 - 5 hrs.
